It’s a mocktail, it’s a cocktail–adults and kids will both love this Organic Ginger Mint Cooler.

When you were little, did your Mom give you ginger ale to soothe your upset stomach? It may or may not have helped with nausea, but I do remember feeling pretty special that I got to drink “pop” when my brothers didn’t. Most ginger ale sold today probably doesn’t contain real ginger, but you can find quality ginger ales in the health food sections of your local grocery store. I love Organic Fair Ginger Ale Soda Syrup. It’s made just a short distance from where I live but is widely available everywhere.

To celebrate the arrival of summer, I concocted this Ginger Mint Cooler using organic ginger soda syrup, fresh squeezed lime juice, mint from my garden and sparkling water. Poured over ice, it made a healthy refreshing mocktail. And then I made it even better by adding some gin! My mocktail grew up into a cocktail. Ginger is sweet, it’s savory, and it’s spicy, all at the same time. Besides being tasty and helping to aid digestion, pregnant women know about ginger’s anti-nausea benefits. It has also been used for centuries to reduce inflammation. With a little lime and fresh mint, this Ginger Mint Cooler is the perfect drink for a summer day, or for any time of the year.

- 10 - 12 fresh mint leaves
- 2 Tablespoons organic Ginger Ale soda syrup
- 1 teaspoon honey (optional, but good)
- freshly squeezed juice of 1 lime (plus lime wedge for garnish)
- carbonated water
- 1½ ounces gin (optional)
- Squeeze the juice of a lime and put it in a tall glass with the mint leaves and honey. Muddle.
- Fill the glass with ice.
- Add 2 tablespoons organic ginger ale syrup.
- Top with carbonated water and stir to combine.
- Garnish with lime and/or fresh mint.

Where can you buy the ginger ale soda syrup?
It’s made by Organic Fair here in the Cowichan Valley. It’s sold locally and I would imagine throughout BC, but it’s also sold online. http://www.organicfairmarket.ca/soda-syrups-s/104.htm The ginger ale is by far the best (in my opinion!)
