This paleo taco chicken with guacamole and fresh salsa is a kid-friendly meal than you can make in less than 30 minutes. Use this recipe for both chicken wings or chicken strips.
Sometimes it seems impossible to find anything that both kids and adults will like. I hate to succumb to making separate meals to keep everyone happy. I struck gold, however, with a meal I made on the weekend. Taco chicken wings served with my quick chunky guacamole and fresh salsa is a meal that will be on the menu in our home frequently from now on.
I made these taco chicken wings as picnic food to take boating. Both kids and adults gobbled them up. They’re crispy, juicy, and have just the right amount of spice to satisfy everyone. They’re the easiest wings I’ve ever made. I tossed them with homemade taco seasoning mix, baked them for 28 minutes and we dipped them in guacamole and fresh salsa.
The kids liked them so much that I decided to do the same with chicken strips. I simply sliced boneless, skinless chicken breasts into fingers, tossed them with the taco seasoning and again, baked them for 28 minutes. While they were in the oven, I made a simple kale salad with fresh greens from the garden. Another 30-minute meal!
I tried the chicken strips two ways: one coated with equal parts of taco seasoning and cornmeal and the other simply with taco seasoning. Nix the cornmeal. They’re much tastier without it. These chicken strips stayed crispy in the fridge, so they would be perfect the next day in a packed lunch, too. Enjoy!
- 3 pounds fresh chicken wings OR 3 large boneless skinless chicken breasts, sliced into strips
- 3 tbsp taco seasoning mix, or more
- guacamole (either store-bought or homemade)
- fresh salsa, (either store-bought or homemade)
