½cupdried cherries,or dried cranberries, very finely chopped
¼cuppumpkin seeds,roughly chopped
¼cupquality dark chocolate or mini chocolate chips or chocolate morsels,melted (optional garnish)
Instructions
Preheat oven to 300°F. Line an 8-inch baking pan with parchment paper, letting the ends drape over the sides of the pan.
In a medium bowl, mix the honey, almond butter, almond flour, vanilla and sea salt together with a spoon or spatula until well blended.
Fold in the cashews, cherries and pumpkin seeds and mix until evenly distributed.
Press very firmly into the prepared baking pan, spreading right into the corners. The bars will be about ½ inch thick.
Bake at 300°F. for 22-24 minutes.
Cool in the pan. Cool further in the refrigerator before slicing into bars. Drizzle with melted chocolate, if desired. Store, individually wrapped, in the refrigerator or freezer.
Notes
These bars need a sticky sweetener like honey to hold them together. Substitute dried cranberries if you don't have dried cherries or if you find them too sweet. The chocolate drizzle is optional, as the bars are naturally very sweet.
