Grilled Corn on the Cob--Two Ways

Fresh grilled corn on the cob, grilled over medium heat and slathered with a choice of two seasoned butters: cilantro-lime or chili-lime.

  • 6 cobs fresh corn silk removed, husks pulled back to expose the cob.

Cilantro-Lime Butter

  • 2 tbsp butter at room temperature
  • 1 tbsp finely chopped cilantro leaves
  • 2 tsp lime juice
  • 1 tsp lime zest

Chili-Lime Butter

  • 2 tbsp butter at room temperature
  • 1 tsp chili powder
  • 2 tsp lime juice
  • 1 tsp lime zest


  • Pre-heat the grill to low to medium.
  • Zest and juice a lime.
  • In separate small dishes, use a fork to mix together the ingredients for each of the seasoned butters.
  • Brush a little of the butter on each of the cobs and lay on the grill so the husks are hanging off the edge. This gives you something to use to turn the cobs as they cook. Besides, it looks kind of pretty.
  • Grill over low to medium heat turning occasionally until the kernels are tender and there is the beginning of a nice brown char.
  • Remove from the grill and brush with additional seasoned butter while still warm.
