A super fresh and flavourful burrito bowl made even healthier by adding quinoa. This makes a great weeknight meal that can easily be adapted to your family's tastes.

cup
quinoa cooked in 2 cups water
1
cup
salsa,
homemade or store-bought

cups
romaine lettuce,
chopped
1
cup
corn,
frozen or canned
1
red bell pepper.
diced
½
green bell pepper.
diced
1
14 oz. can
black beans,
rinsed and drained

Roma tomatoes or 1 cup cherry tomatoes,
chopped
Chipotle Crema
1
cup
sour cream or Greek yogurt
1
tablespoon
chipotle sauce
1
garlic clove,
minced
juice of 1 lime
pinch of salt
Avocado Crema
2
cups
loosely packed cilantro
1
avocado
juice of 1 lime

garlic cloves

cup
olive oil

tablespoon
white wine vinegar

teaspoon
salt
Instructions
Cook quinoa, then set aside to cool. Mix with the salsa and put in the bottom of the serving bowl.
Layer the remaining ingredients on top.
Top with EITHER the Chipotle Crema or the Avocado Crema
Chipotle Crema--simply stir all ingredients together.
Avocado Crema--put all ingredients in a blender and blend until smooth.
