Almond Flour Chocolate Chip Cookies
This recipe for gluten-free chocolate chip cookies is grain-free. Made with almond flour, coconut flour, and coconut sugar, these cookies are studded with lots of chocolate chips.

blanched almond flour

coconut flour,

baking soda

coconut palm sugar

brown sugar

almond butter

teaspoon
pure vanilla extract

Instructions
Heat oven to 350°F. and line two baking sheets with parchment paper or silicone liners.
In a medium mixing bowl, whisk the almond flour, coconut flour, baking soda, and sea salt.
In a large mixing bowl using an electric mixer, beat the room temperature butter with the coconut sugar and brown sugar until fluffy.
Add the almond butter, vanilla and egg and beat well until thoroughly combined.
Add the flour mixture and beat until combined.
Stir in chocolate chips.
Refrigerate the dough for 15 minutes.
Roll the dough into 25 balls, or use a cookie scoop, then place on parchment paper-lined baking sheets and flatten slightly with a fork.
Bake at 350°F for 12-14 minutes. Cookies will be soft when you remove them from the oven but will become crisper as they cool.

* I use either Bob's Red Mill Blanched Almond Flour or Kirkland Blanched Almond Flour (available at Costco).
