Total Time 35 minutes
Servings 8 crostini
- 1/3 loaf fresh baguette
- 2 tsp extra-virgin olive oil
- 4 fresh figs, about 4 slices per fig, stems removed, sliced vertically into thin slices
- 1/2 cup fresh burrata cheese
- 8 tsp honey
- 4 tsp balsamic vinegar
Preheat oven to 350°F.
Make the crostini. Slice the baguette in ½ inch slices. Brush both sides with a little olive oil and place on a parchment paper lined baking sheet.
Bake for 10 minutes. Remove the tray from the oven, turn the slices over and bake for another 5 minutes or until just slightly crispy. The crostini should still be soft on the inside.
Lay the fig slices on a parchment paper lined baking sheet, brush each with 1/2 teaspoon of honey and broil with the rack in the highest position, just until honey has melted and started to bubble, about 4-5 minutes. Watch carefully.
Spread each crostini with 1 Tablespoon burrata cheese and 2 fig slices.
Drizzle each crostini with 1/2 teaspoon balsamic vinegar.
