This tender Grain-Free Apple Cranberry Bread is topped with a naturally sweet glaze made with pecans, maple syrup and coconut oil. A healthy dairy-free gluten-free apple bread.
In a large bowl, combine oil, maple syrup, coconut sugar and applesauce. Stir well.
Add the eggs and beat until well combined.
In a medium bowl, combine the finely ground almond flour, coconut flour, baking soda, lemon zest and spices.
Add the dry ingredients to the wet ingredients and stir just until combined. Gently fold in the apples and cranberries.
Spread in prepared pan.
Bake at 325°F. for 55-60 minutes or until toothpick inserted in middle comes out clean.
Meanwhile, blend all Maple Pecan Glaze ingredients in a blender. It's okay if it's a little chunky.
When loaf is completely cool, spread the glaze on top and serve. Store in refrigerator.
Notes
Add only ⅓ cup of apples or the loaf will be too moist.If your batter seems much too wet, add 1 extra tablespoon of coconut flour.The baking time will depend on the size of the loaf pan you use.
