Peel the carrots and remove their tops. Cut into uniform sizes that will fit in the basket of your air fryer in a single layer. Toss with 1 teaspoon oil, smoked paprika, salt and pepper, and minced garlic.
Preheat the air fryer to 360°F. for 3 minutes. When hot, remove the basket and arrange the prepared carrots in a single layer. Replace the basket and air fry at 360°F. for 7 to 8 minutes. Remove the basket, shake it or use tongs to flip the carrots. Replace the basket again and continue cooking for 5 to 6 minutes or until carrots are fork tender.
Transfer the carrots to a serving dish. Top with crumbled feta cheese, chopped pistachios and minced parsley. Squeeze a little fresh lemon juice over all and serve!
For Oven Roasted Carrots
Preheat oven to 375°F. Place a sturdy baking sheet with low sides in the oven while it is preheating.
Prepare the carrots. Peel or scrub and trim the tops to 2 inches.Toss with 1 teaspoon oil, smoked paprika, salt and pepper, and minced garlic.
Once the oven is preheated, remove the baking sheet and line it with parchment paper for easy cleanup. Spread the carrots out on the baking sheet (using two sheets, if necessary) so they aren't touching one another.
Roast for 30 to 40 minutes, turning once part way through, until the carrots are fork tender. Transfer to a serving dish and top with feta cheese, chopped pistachios and parsley. Squeeze a little fresh lemon juice over all to brighten the flavours and serve!
