Instructions
Chop the onion and vegetables, mince the garlic, and slice the cooked sausage.
Add the broth, tomatoes with their liquid and all remaining ingredients except fresh parsley and salt and pepper to the bowl of a slow cooker.
Cover with a lid and cook on low for 7.5 to 8 hours or 4 hours on high or until the lentils are tender.
Taste and season with salt and pepper if necessary. Ladle into bowls and garnish with freshly chopped parsley.
