3ozcanned chipotle peppers in adobo sauce,finely diced with liquid
2clovesgarlic,minced
2tablespoononion,finely minced
1tablespooncilantro,finely minced
sea salt and pepper
Fresh Peach Salsa
4cupspeaches, chopped and peeled(about 4 large peaches)
¼cupred onion,finely chopped
½cup eachred and yellow bell pepper,finely chopped
1tablespoonjalapeño pepper,finely minced
¼cupcilantro,chopped
1clovegarlic,minced
1tablespoonrice vinegar
1tablespoonlime juice
1teaspoonhoney
Instructions
Chicken Burgers
Combine all chicken burger ingredients in a large bowl until well mixed.
Form into patties (about ⅓ cup each)
Fry or grill in well-greased pan or grill until no longer pink inside and a meat thermometer inserted sideways indicates an internal temperature of at least 165°F. (about 8-10 minutes per side). If the burger sticks to the pan when you try to flip it, let it cook for another minute or two.
Serve with a large spoonful of Fresh Peach Salsa.
Fresh Peach Salsa
Combine all peach salsa ingredients in a medium bowl, tossing until well-mixed. Refrigerate for 30 minutes before serving.
