These no-bake coconut date logs slice into sweet and crispy date cookies. They're an easy roll and slice date cookie made with soft Medjool dates and puffed rice cereal. They're delightfully addictive and just may become a new holiday tradition in your home!
Pit the dates and chop each date into 6 to 8 pieces.
Add butter and sugar to a heavy-bottomed saucepan along with the dates.
Heat over low to medium heat until a thick paste forms, about 7 to 8 minutes. Remove from the heat and transfer to a glass bowl. Allow the mixture to cool slightly for 4 to 5 minutes.
Add the crisp rice cereal, a little at a time. Stir until evenly distributed.
Lay the mixture on a sheet of parchment paper. Roll into two logs about eight inches long. Roll in finely shredded coconut (or leave plain).
Wrap tightly with parchment paper or plastic wrap. Store in a tightly covered container.
When you're ready to serve, slice the log into rounds about ⅓ to ¼ inch thick.

These date logs will keep fresh in the fridge for at least a week. You can freeze them for 3 to 6 months.These make a pretty addition to a holiday cookie tray. You can also package them in cellophane with a ribbon for a hostess or neighbor gift.
