Cook a complete Chicken Fajitas dinner quickly in your air fryer. Perfectly seasoned chicken, bell peppers and onions will be cooked in 10-15 minutes, ready to fill a tortilla, or top a salad or bowl of rice.
tortillascorn tortilla, white corn tortillas or other gluten-free tortillas or flour tortillas if you don't need this recipe to be gluten-free.
Instructions
Start by slicing the peppers and chicken into strips no more than ½ inch wide. You want them to cook at the same rate, so try to keep them roughly the same size. Slice the onion.
Toss the peppers, onions and chicken with a small amount of oil, then sprinkle with fajita seasoning and toss until well coated.
Brush the basket of your air fryer with a thin layer of oil. It's best to use an oil with a high smoke point, like avocado oil or grapeseed oil.
Preheat your air fryer to 380°F. for 3 minutes.
Add the mixture (chicken, peppers and onions) to the air fryer basket, shaking to distribute evenly. Depending on the size of your air fryer, you may have to cook these in two batches. Cook half and keep warm while you cook the other half.
Air fry at 380°F. for 10 - 15 minutes, pausing, removing the basket and shaking it to redistribute the fajita mixture every 4 minutes or so. Check the internal temperature of the thickest part of the chicken with an instant-read meat thermometer. It should register 165°F. to be safe.
Serve with warmed tortillas, and offer toppings like avocado or guacamole, salsa or pico de gallo, sour cream, cilantro, and lime slices.
