    🛒 Ingredients for peanut butter collagen bars

    You'll find a complete list of ingredients with quantities in the recipe card below. But before we get to the full recipe, here are a few notes about the ingredients.

    • peanut butter: Use creamy peanut butter with no additives, sugar or salt.
    • honey: Adds natural sweetness and helps to bind the bars together.
    • coconut oil: Adds moisture and makes it easy to combine the peanut butter and honey.
    • ground flaxseed: For protein and a good source of fiber.
    • vanilla extract: A perfect flavor enhancer.
    • collagen peptides powder: I use Organika Enhanced Collagen powder in this recipe. It's a flavorless powder that I also add to smoothies and collagen shakes. You can substitute your favorite protein powder if you'd like.
    • chocolate chips: I like dark chocolate chips for this recipe. Choose dairy-free or vegan chocolate chips if you prefer, or use chopped dark chocolate.
    • flaky sea salt for sprinkling on the chocolate, optional.

    🔪 Instructions

    Here's a short step-by-step list of what you'll do to make these peanut butter protein bars perfectly. You'll find complete instructions in the recipe card at the end of this post.

    1. Combine peanut butter, honey, coconut oil, and vanilla extract in a medium bowl.
    2. Stir in the ground flaxseed and collagen powder. Once you can't stir anymore, use your hands to finish combining the dough.
    3. Press firmly into a lined loaf pan.
    4. Melt the chocolate and spread it evenly over the surface of the peanut butter mixture. Add a sprinkle of flaky sea salt if you'd like. Chill until very firm before slicing.
    5. Slice and enjoy!

    🔁 Possible Variations

    Feel free to use almond butter, cashew butter, or any nut butter if you prefer.

    Sprinkling the chocolate layer with flaky sea salt is optional, but tasty!

    👍🏼 Helpful Tip

    To make clean cuts and avoid cracking the chocolate layer, use a knife to lightly score the chocolate before transferring it to the fridge to chill for 45 - 60 minutes.

    When you're ready to slice into bars, dip a sharp knife into a glass of hot water to warm it, then carefully slice using the scored lines you had made earlier.

    ⏰ Storage Instructions

    To store: Store the protein bars in a covered container in the fridge for up to 2 weeks.

    To freeze: Pack into an airtight container or a resealable freezer bag and store for a month or more.

    Ingredients

    • ¾ cup creamy peanut butter, no sugar or salt added
    • ¼ cup honey
    • 1 tablespoon coconut oil, melted
    • 1 teaspoon pure vanilla extract
    • ⅓ cup ground flaxseed
    • ⅓ cup collagen powder
    • ½ cup dark chocolate chips

    Instructions

    • Line an 8-inch by 4-inch loaf pan with parchment paper.
    • In a medium bowl, combine peanut butter, honey, coconut oil and vanilla extract.
      Melt the chocolate and spread it evenly over the surface of the peanut butter mixture. Chill until very firm before slicing.
    • Stir in the ground flaxseed and collagen powder. Once you can't stir anymore, use your hands to finish combining the dough.
    • Press firmly and evenly into the lined loaf pan.
    • In a glass bowl, melt the chocolate chips or chocolate pieces either in 30-second intervals in the microwave or over a pan of simmering hot water on the stovetop. Once it's smooth and creamy, spread it evenly over the surface of the peanut butter mixture. Use a knife to lightly score the chocolate layer into bars that you will cut later.
    • Chill until very firm before slicing. See the tip below for how to slice without cracking the chocolate layer.
    • Store in the fridge or freezer.
