    No tortillas needed to make these Avocado Tacos! Seasoned ground beef is stuffed into avocado halves and covered with cheese, sour cream and salsa. Healthy, easy and delicious.

    Avocado Tacos Ingredients

    Ingredients needed to make avocado tacos.
    • Ground beef. The meat provides the protein and substance for the tacos. Ground turkey makes a delicious substitute too.
    • Avocados. Check for ripeness by giving the avocados a gentle squeeze. When ripe, avocados will feel slightly soft and turn dark green in color.
    • Lime or lemon. Either one can be used. The acidity in their juice is squeezed over the sliced avocados to keep them from turning brown.
    • Taco seasoning. Make a batch of homemade Taco Seasoning for this stuffed avocados recipe or buy something ready-made.
    • Sour cream. A dollop of sour cream on top of the tacos adds a cool touch to balance the spiciness in the beef. Plain unsweetened Greek yogurt can also be used.

    Easy Instructions

    First, cut the avocados in half. Scoop out the pit and a little of the avocado flesh to create a well in the center.

    Squeeze lime or lemon juice over the avocados. Set aside while you cook the taco meat.

    Brown the ground beef on the stove with onion and olive oil. Add water and taco seasoning. Cook for 5 minutes.

    Scoop a serving of beef into the well of each avocado half. Add shredded cheese, sour cream, lettuce and tomato on top. Serve stuffed Avocado Tacos right away.

    Tips and Tricks

    • Got leftover meat? Store it in the fridge in a covered container. Use it to make a healthy taco salad for lunch the next day!
    • For more heat, top the avocados with salsa or no-sugar-added hot sauce. (Not all salsa is keto approved, so check labels for net carbs if this matters to you.)

    What can I use instead of avocados in this taco recipe?

    Bell peppers make a good substitute for the avocados. Slice them in half and remove the stem and seeds. The recipe will still be keto.

    Can I make these in advance?

    Once stuffed, these avocado tacos are best enjoyed right away. You can prep the taco meat ahead of time and reheat it when you're ready to assemble the tacos.

    Can I use packets of taco seasoning instead of homemade?

    Ingredients

    • 4 ripe avocados
    • Juice of 1 lime or lemon
    • 1 Tablespoon extra-virgin olive oil
    • 1 medium onion chopped
    • 1 pound lean ground beef
    • 2 Tablespoons taco seasoning
    • 2 Tablespoons water
    • Salt and pepper to taste

    Topping options:

    • ⅔ cups shredded Mexican cheese
    • ½ cup quartered grape tomatoes
    • ½ cup sour cream

    Instructions

    • Cut the avocados in half. Remove the pit and scoop out a bit of avocado to create a larger well which will be filled with the beef mixture. Squeeze a little bit of lime or lemon juice over the open avocados to prevent browning.
    • In a medium pan, heat oil over medium heat and saute onion until soft (about 5 minutes). Add ground beef and fry until brown.
    • Add taco seasoning and water and cook over low heat for 5 minutes.
    • Season with salt and pepper as needed.
    • Remove from heat and let cool a little.
    • Fill the holes in each avocado with beef, then top with cheese, tomato, and a little sour cream.

    Notes

    • Ground turkey works well as a substitute for ground beef.    
    • Make healthy taco salads with the leftovers.
    • SUBSTITUTE: What else can I use instead of avocados? Bell peppers are a good substitute for avocados and the recipe will still be keto-friendly.
