    Easy 5-minute Sesame Asparagus

    This easy 5-Minute Sesame Asparagus is so simple it hardly needs a recipe!

    When asparagus appears in the stores, it's a signal that Spring has arrived. Here on the West Coast of Canada, the earliest asparagus comes from Mexico. A month or so later, we receive it from California, and even later from Washington State. But . . . at the beginning of May, we celebrate the arrival of our local asparagus.
    And there is nothing like it. It is beyond compare. I live just a few minutes away from an asparagus farm and can pick up a bag of asparagus freshly picked just an hour or two before. How lucky am I? Mexican asparagus and local asparagus are like two completely different vegetables. Freshly picked asparagus is tender and sweet and we eat the raw spears right from the bag on the way home from the farm.

    I use the ends that I trim from the spears in my favorite Dairy-Free Creamy Asparagus Soup. I love to combine fresh asparagus with salmon and often make this Asparagus Salad with Smoked Salmon and Sesame Miso Vinaigrette.

    Ingredients

    • fresh asparagus spears
    • sesame oil or toasted sesame oil
    • raw sesame seeds

    Instructions

    • Heat a skillet over medium heat. Add the sesame oil and heat gently.
    • Add the trimmed asparagus spears and toss to coat. Saute 4-5 minutes or until barely tender-crisp.
    • Sprinkle with sesame seeds, heat for 1 minute more. Serve hot.

    This recipe resulted when I realized at a recent dinner party that I hadn't thought about what to do with the asparagus I had on hand. Everything else was ready to serve. Into the skillet it went, and I tossed it with a little sesame oil and sesame seeds and hoped for the best.

    And now it's a favorite!
