    🛒 Ingredients and substitutions

    You'll find a complete list of ingredients with amounts in the printable recipe card below. But before we get to the full recipe, here are a few notes about the ingredients.

    • ripe peaches: You can use fresh peaches or frozen peaches.
    • honey: If your peaches are ripe and naturally sweet, you won't need to add much honey.
    • lemon juice: Freshly squeezed lemon juice from half a lemon adds flavour and helps to prevent the peaches from turning brown.
    • fresh ginger: Just a little fresh ginger root adds a hint of subtle warmth to this light peach sorbet. You can substitute cinnamon for ginger if you'd prefer.

    🔪 Instructions

    Here's an overview of what you'll do to make this recipe perfectly. You'll find complete instructions in the recipe card at the end of this post.

    • Pit and slice the peaches and add them to a blender or food processor container along with the juice of half a lemon, honey, and grated or minced ginger root. (No need to peel them.)
    • Purée until smooth. Taste and add more sweetener and/or ginger if necessary.
    • Chill the mixture in the fridge for an hour.
    • With your ice cream machine set to the Sorbet setting. Press Start. Pour the mixture through the spout, then cover with the cap. Let it churn until thickened, about 28 - 30 minutes. The sorbet will be soft. If you'd like a firmer consistency, transfer it to an airtight container and freeze for 2 hours. Let stand on the counter for 15 minutes before serving.

    🔁 Possible Variations

    If you don't like ginger, add ½ teaspoon of ground cinnamon and a pinch of nutmeg instead.

    👍🏼 Helpful Tips

    Easy on the ginger! Ginger can be overpowering if you add too much. Grate a little, add it to the blender, then taste. You can always add more if you'd like. The ginger should simply provide a hint of flavour as an aftertaste.

    Sweeten to taste. The amount of honey (or other sweetener) you'll need will depend on the ripeness of your peaches. Again, blend, then taste and add more if you'd like it sweeter.

    Do I have to peel peaches to make sorbet?


    It's not necessary to peel peaches before blending them to make sorbet. In fact, the peach skins add a warm colour to the finished sorbet.

    Wipe them with a damp cloth, removing any fuzz if your variety is a fuzzy one. Cut in half, twist, remove the pit, then slice the peaches directly into the blender container.

    What's the difference between sherbet and sorbet?

    Sorbet is made with fruit or fruit juice, and sweetener (usually sugar) while sherbet is made with fruit juice, sweetener, and a small amount of milk. Sherbet is slightly creamier than sorbet, but sorbet often has a more intense fruit flavour.

    🍽 What to serve with peach sorbet

    • Serve this peach sorbet as a refreshing palate cleanser between savoury courses.
    • Serve it as a dessert. Add a few slices of fresh peaches, a ginger snap cookie, or an Earl Gray Shortbread cookie.

    ⏰ Storage Instructions

    To store: Store sorbet in an airtight container with minimal headspace. Avoid storing it in the freezer door where temperatures may fluctuate. If sorbet thaws a little and then refreezes, it may develop ice crystals or become grainy.

    • 5 large peaches or 5 cups frozen peaches
    • ⅓ cup honey, or more to taste
    • 2 tablespoons lemon juice, freshly squeezed
    • ¼ inch knob fresh ginger root, grated or minced

    Instructions

    • Wash and pit the peaches. Slice, then add them along with the honey, lemon juice, and fresh ginger to a blender container or to the bowl of a food processor.

    • Taste and add more honey or more ginger, depending on your preference. Blend again.
