    Avocados, in moderation, are a healthy treat at any time of year. These stuffed avocados with herb dip make a fun and even elegant appetizer. And whenever I have some of this creamy sour cream dip left over, I stuff it in an avocado half and call it lunch!

    Avocados make an ideal vessel for filling. Their neutral flavor lends itself to stuffing with strongly flavored ingredients. These Cajun Shrimp Stuffed Avocados are an example--spicy shrimp with buttery avocado makes a beautiful combo.

    Everyone needs a reliable recipe for an easy herb sour cream dip! This one is a favorite. It's seasoned with garlic, lemon, green onions, parsley, celery seed, a hint of Dijon, and optional capers.

    Stuff generous dollops of dip into freshly cut avocado halves, add a spoon on the side, and enjoy!

    🛒 Ingredients

    You'll find a complete list of ingredients for this stuffed avocado recipe in the recipe card below. This dip is a mixture of Vegenaise (or your favorite mayonnaise), sour cream, and herbs, with a little Dijon mustard. It's seasoned with capers, celery seeds, salt, and freshly cracked black pepper.

    If you don't like capers, leave them out. The dip will still have lots of flavor and be delicious! You can also substitute thick Greek yogurt for the sour cream, although it will change the flavor slightly, making it a little tangier. Your choice!

    You don't need any special equipment to make this tasty Keto sour cream dip! Simply mix all the ingredients in a small bowl. You can either serve it right away or refrigerate it and allow the flavors to blend a little more.

    🍽 Serving suggestions

    You can enjoy this dip in so many ways! Here are a few ideas.

    As shown in the photos, slice the avocados in half, remove the seed, brush with a little lemon juice to prevent browning and fill the cavity with a couple of tablespoons of dip. Sprinkle with a little chopped parsley and freshly ground black pepper. For an elegant appetizer, add a grilled prawn on top!

    Add chopped cooked shrimp or prawns to the dip. Shrimp stuffed avocados are incredibly delicious! You'll need about ⅓ cup of cooked shrimp.

    Similarly, add a little finely chopped smoked salmon, about 2-3 tablespoons, to the basic dip. The lemon and capers in this dip recipe pair beautifully with smoked salmon.

    If you love seafood, you may love crab-stuffed avocados, too. Add ¼ cup of well-drained crab to this herb dip recipe and fill the avocado halves with it.

    Serve this herb dip as is, in individual cups with fresh veggies, tortilla chips, crackers, or toasted pita chips for dipping.

    Storage instructions

    You can make this keto herb dip ahead of time. Keep it chilled in the fridge and add it to the avocado halves just before serving.

    Be sure to promptly refrigerate any leftover dip. Store in a covered container in the fridge. It will last for 3 to 5 days.

    Ingredients

    • 1 cup mayonnaise, Vegenaise or your favourite mayonnaise
    • ½ cup sour cream
    • 2 tablespoon fresh parsley finely chopped
    • ½ teaspoon Dijon mustard
    • 2 medium green onions, finely sliced
    • 1 clove garlic, finely minced or grated
    • ½ teaspoon fresh lemon juice, plus more for brushing on avocado halves
    • 1 ½ tablespoon capers, drained and chopped
    • ¼ teaspoon celery seeds
    • coarse sea salt to taste
    • freshly ground black pepper to taste
    • 4 medium avocados, halved, seed removed

    Instructions

    • Mix all ingredients except avocados together in a small bowl.
    • Add a generous dollop of dip to each avocado half, top with a little more cracked pepper and chopped parsley and serve immediately.

    Notes

    Refrigerate leftover dip promptly.

      Delicious! I had more dip than what I needed to stuff the avocados, so I just put it in a bowl and made a big platter of fresh veggies. Love this dip!
