    • marinade ingredients: lime juice, olive oil, garlic, and spices

    🔪 Instructions

    Complete instructions are written in the recipe card below. Here's a quick overview of what you'll do to make this healthy fajita bowl.

    1. Marinate. Start by mixing the chicken fajita marinade ingredients and marinating the chicken breasts.
    2. Prepare the veggies. Next, slice or chop the onions, bell peppers, and tomatoes and prepare the cauliflower rice.
    3. Cook the chicken. Once the vegetables are prepared, in a large skillet over medium-high heat, sear the chicken on both sides and cook until juices run clear and it has reached an internal temperature of 165°F. Set aside to rest.
    4. Sauté the peppers and onions in the same skillet.
    5. Assemble. Now it's time to assemble the bowls. Arrange the vegetables on a bed of cilantro lime rice, then slice the avocado and add to the bowls.
    6. Add the sliced cooked chicken. And finally, slice the fajita chicken breasts, add to the bowls, and drizzle with any pan juices. Garnish with cilantro or green onions and a lime wedge, if you like. Enjoy!

    This Chicken Fajita Bowl with Cauliflower Rice makes an ideal dinner for busy weeknights because you can prepare much of it ahead of time. Work smarter, not harder!

    Double or triple the fajita chicken portion of the recipe and freeze it in meal-size containers. Do the same with the cauliflower rice (see easy instructions here) and then all you have to do is sauté bell peppers and onions and add fresh vegetables to your bowl.

    🔁 Possible Variations

    • Add your favorite veggies, like lightly sautéd zucchini.
    • In a hurry? Use rotisserie chicken and season it with fajita seasoning.
    • Add grated cheddar cheese or Monterey Jack cheese and/or sour cream, or vegan sour cream.
    • Add a scoop or two of pico de gallo or fresh salsa.
    • Chop the chicken into small cubes, dice the bell peppers and avocado, and mix it all together!

    Chicken Fajita Bowl with Cauliflower Rice

    Ingredients

    • 2 large chicken breasts, boneless, skinless
    • 1 tablespoon high heat oil like grapeseed or avocado oil
    • 1 small red onion, sliced thinly
    • 3 medium bell peppers, red, orange, and yellow
    • 1 cup fresh tomatoes, chopped
    • 1 medium avocado, peeled, pit removed and sliced
    • 1 cup cauliflower rice with cilantro and lime

    Marinade

    • 2 tablespoon lime juice, or lemon juice
    • 2 tablespoon olive oil
    • 2 cloves garlic, minced
    • ½ teaspoon sea salt
    • ½ teaspoon ground cumin
    • ½ teaspoon chili powder
    • ½ teaspoon smoked paprika
    • ¼ cup cilantro, chopped

    Instructions

    • If your chicken breasts are quite thick, slice them horizontally so they will cook quickly. Set aside in a glass dish.
    • Combine all marinade ingredients and pour over chicken breasts. Allow to marinate for 1 - 2 hours or up to 8 hours in the fridge.
    • Slice onion and peppers and chop tomatoes and set aside.
    • Prepare cauliflower rice (see 3 Easy Steps to Make Cauliflower Rice.)
    • Heat oil in skillet until it shimmers. Carefully add chicken breasts and sear. Cook on each side for about 5-7 minutes (if thinly sliced, longer if thicker) until meat thermometer registers at least 165°F and juices run clear. Remove from pan, cover with foil and let rest. while you quickly sauté the peppers and onions. 
    • Assemble the bowls with the cauliflower rice, peppers, onions and tomatoes.
    • Peel and slice avocado last to prevent browning. Add chicken to dish, drizzle with pan juices and serve immediately.

      These were the BEST fajitas I’ve ever had. We subbed out the cauliflower rice for some quinoa and the flavors did not disappoint. I’ve been on the candida diet and it’s so hard to find yummy, flavorful meals that I want to come back and make again. The marinade was incredibly tasty; just the right mix of everything. Yum!

        Hi Kathleen,
        So glad you liked it! It's difficult to calculate precisely, as it depends on the size of the chicken breasts, how much of the oil is absorbed and how much of the pan juices you choose to drizzle on top. Using a recipe analyzer, I have calculated it to be 432 calories per serving. I hope this helps! Cauliflower rice is low in calories and so good!

        Hi Angela, You can sauté the peppers and onions in the same pan in which you cooked the chicken if you like, or you can serve them raw. My apologies for the delay in responding. I've been traveling in an area with very little wifi!

      Yummmm Just made these and they were delicious. The family are not clean eaters so they had theirs with sour cream and wraps and loved them but the bowl by itself was soooo good.
