    Busy days call for easy meals, and this Thai Chili Sheet Pan Salmon may be the easiest meal you'll make all week! Bake salmon fillets with a sweet Thai chili glaze along with asparagus spears and bell pepper strips, all on one pan!

Who wouldn't want to dig into this family-friendly dinner, bursting with colorful veggies?
    • You won't need any special equipment to make this sheet pan salmon. Just cover a baking sheet with foil, arrange the salmon and vegetables, brush with sweet Thai chili marinade and pop it in the oven.  You'll be rewarded with melt-in-your-mouth flaky salmon, roasted asparagus and tender-crisp peppers.
    • The Thai chili marinade results in perfectly seasoned heart-healthy salmon, brimming with omega-3 fats. As the dinner bakes, those pretty lime slices release their juice, adding more fabulous flavour. Like magic, everything is ready at the same time!

    Magic? No. Planning and forethought? Yes. Fish bakes quickly, so when you're designing your own sheet pan dinner, it's wise to choose vegetables that are also quick to cook.

    🛒 Ingredients

    Salmon and Veggies

    • salmon fillets
    • bell peppers, 1 each of red, yellow, orange
    • asparagus spears
    • lime
    • sesame oil

    Sweet Thai Chili Glaze

    • sweet Thai chili sauce
    • tamari soy sauce, (or coconut aminos for Paleo diet)
    • fresh garlic
    • fresh ginger root
    • lime juice

    Garnish

    • sesame seeds
    • cilantro (optional)
    • lime slices

    How to Make Thai Chili Sheet Pan Salmon

    1. Mix the glaze ingredients while the oven is pre-heating.
    2. Trim the tough ends of the asparagus and slice the peppers into thin strips.
    3. Toss the vegetables with a little oil (sesame oil adds extra flavor) and arrange on the sheet pan with the salmon.
    4. Top with lime slices.
    5. Brush the salmon with Thai Chili Glaze and roast in the oven.
    6. Remove after 15 minutes to check for doneness, brush with additional glaze, sprinkle with sesame seeds, then pop under the broiler for 3-4 minutes to crisp the top slightly.
    7. Garnish and serve immediately.

    8 Helpful Tips for Making Sheet Pan Dinners

    1. Use a half sheet pan. This is a heavy gauge aluminum pan with raised sides. It measures 18 inches by 13 inches. It is strong enough to be able to withstand high heat and to be placed under a broiler.
    2. Use cuts of meat and types of vegetables that will cook at the same rate. For example, bone-in chicken thighs take longer than boneless, so you can cook them with dense root vegetables like potatoes, carrots, and beets. Fish cooks quickly, so pair it with vegetables that do the same, like asparagus or peppers.
    3. Cut vegetables into uniform sizes so they cook at the same rate. Pat them dry.
    4. Toss vegetables with oil to prevent them from drying out in the oven.
    5. Space the veggies out on the sheet pan. Crowding them causes them to cook in their own steam, rather than roasting. Veggies with crispy edges are what we're looking for!
    6. Line your sheet pan with parchment paper or foil for easy cleanup. Remember, this type of dinner is all about making life easy for yourself.
    7. Test for doneness by using a meat thermometer.
    8. Depending on what you're cooking, you may have to roast your food in stages. Add the dense vegetables first, giving them a head start, before you add more tender ones.

    🍽 What to serve with sheet pan salmon

    This sheet pan dinner makes a complete meal as is, but iff you'd like, cook rice to go with it, like Thai Coconut Rice. (This rice recipe takes a little longer to cook, so start it before you start preparing the sheet pan salmon.)

    You could also serve it with Crispy Lemon Oven-Roasted Potatoes. Roast these on a separate sheet pan and cut them into small bite-sized pieces so they'll be ready when your salmon sheet pan dinner is cooked.

    Storage

    Refrigerate leftover salmon and veggies promptly in an airtight container for up to 3 days.

    Ingredients

    • 4 4 oz. salmon fillets
    • 3 large bell peppers 1 each of red, yellow, orange
    • 1 bunch asparagus spears
    • 1 medium lime
    • 1 tablespoon sesame oil

    Sweet Thai Chili Glaze

    • 6 tablespoons sweet Thai chili sauce
    • 3 tablespoons tamari (gluten-free) or coconut aminos for Paleo diet
    • 1 cloves garlic, minced
    • 1 tablespoon fresh ginger, finely grated
    • 2 tablespoons lime juice, freshly squeezed

    Garnish

    • 2 teaspoons sesame seeds
    • 2 tablespoons cilantro chopped
    • 1 medium lime, sliced or quarterd

    Instructions

    • Preheat oven to 400°F.  Line a sheet pan with foil and brush or spray with 1 teaspoon oil to prevent sticking.
    • Trim tough ends of asparagus spears and slice peppers into strips. Slice the lime.
    • Arrange the salmon filets on the sheet pan and surround them with vegetables and lime slices.
    • Brush the salmon generously with Sweet Thai Chili Glaze, reserving ¼ cup for basting. Bake for 15 minutes, brush with more glaze, sprinkle with sesame seeds, then broil for 3- 4 minutes. 
    • Brush with remaining glaze, garnish with more fresh lime quarters and chopped cilantro and serve immediately.

        Thanks, Cathy! Yes--the secret to sheet pan dinners is matching the cooking times of the meat and the vegetables. We had this one again last night with tiny potatoes and asparagus and it was all cooked at the same time.
