    This cinnamon-infused simple syrup needs only 3 ingredients:

    • water: Use filtered water if it's available or feel free to use tap water.
    • sweetener: A bartender's traditional simple syrup is made with granulated sugar. You can use white sugar or brown sugar or you could also use Monkfruit sweetener to keep this syrup Keto-friendly.
    • cinnamon: I use fresh whole cinnamon sticks. If the ones you have been hanging around in your kitchen cabinet for many months, it may be time to buy some fresh ones! You'll want to get the most flavour from them to make this cinnamon syrup. You could use ground cinnamon, but as it doesn't dissolve, you would need to strain it using a fine mesh strainer, so I recommend using the sticks.

    🔪 How to make cinnamon simple syrup

    Here are step-by-step instructions to make this recipe perfectly.

    Start by combining equal parts of water and sugar in a small saucepan. Stir over medium heat until the sugar has completely dissolved. Bring the mixture to a boil.
    Add the broken cinnamon sticks, turn the heat down, place a lid on the pan and let it simmer for 5 minutes.

    Remove the pan from the heat and let it sit for an hour or longer to allow the cinnamon flavour to infuse into the syrup.

    Remove the cinnamon sticks and transfer the syrup to a sterilized container with a lid.

    🔁 Possible Variations

    Add a teaspoon or two of pure vanilla extract to the syrup after you remove the pan from the heat.

    • Swirl it into a bowl of healthy oatmeal.
    • Pour it on French Toast! It's a delicious alternative to maple syrup on Slow Cooker Blueberry French Toast, Apple Cinnamon French Toast Bake , or Air Fryer French Toast Sticks.
    • A plain cup of coffee becomes something special when you add a little of this sryup to your milk before frothing! Cinnamon latte, anyone?
    • Add a small amount to a steaming mug of hot chocolate.
    • Drizzle it on vanilla ice cream for dessert!

    Store this syrup in an airtight container or a Mason jar in the fridge for up to a month. You can also pour it into ice cube trays and freeze it.

      We love this simple syrup! We have added it to hot apple cider, iced ginger beer, and topped oatmeal with it. But the absolute best way to use cinnamon syrup, in my humble opinion, is in an old fashioned. Just add bourbon and a couple dashes of angostura bitters, then spritz with the peel of an orange. Yum! Thank you for so many wonderful recipes, and beautiful photography!
