I’d like to imagine that it’s all snowy and cold here and that I’m cuddling up by the fire with a mug of hot chocolate and a good book.
In reality, it’s fairly warm and rainy here on the West Coast of Canada. But Christmas is coming, and the songs we hear are all about letting it snow and chestnuts roasting and sleigh rides. So to get myself in a wintery mood while wrapping presents this afternoon, I whipped up these healthy shots of peppermint hot chocolate made with raw cacao, honey, a little dark chocolate and some almond milk.
I had picked up a little bottle of Peppermint Schnapps earlier in the fall in the biggest liquor store I have ever seen. Seriously, it was in a former Target store in Palm Desert and it was huge! Besides the wine selection, it had a racks of those cute little mini bottles of liqueurs that are much harder to find here in Canada.
I concocted this recipe, simmering it in a saucepan on the stove. And then I thought just how darn cute it would be in little shot glasses. And how romantic it would be to have a little shot with my hubby before dinner.
But I know that man well, and just as I suspected, he politely declined in favour of a beer. Honestly, if he was offered the fanciest artisanal cocktail in the entire world, the best Scotch, or the priciest brandy, I swear he would always simply choose a craft beer. I still love him, despite his simple tastes.
So, if you live in a spot that’s all snowy and cold and wintery-feeling right now, I invite you to try these Hot Chocolate Peppermint Shots with raw cacao. They’re silky smooth and chocolatey with a little kick from the peppermint schnapps, just to warm you up right down to your toes. Enjoy. I did.
Hot Chocolate Peppermint Shots with Raw Cacao
- 1 cup non-dairy milk, almond, coconut, rice
- 1 tablespoon raw cacao powder, or cocoa powder
- 1 - 2 tablespoons honey
- 1/2 - 1 ounce dark chocolate, broken in small pieces
- Peppermint Schnapps, optional
- In a small saucepan, combine all ingredients except Peppermint Schnapps and heat gently until well combined and chocolate has melted. Do not boil.
- Pour into shot glasses and add about 2 teaspoons of Peppermint Schnapps to each glass.
- Stir gently, garnish with a candy cane and serve.
