    Blackberry Kiwi Salad with Oranges

    This Vitamin C-rich Blackberry Kiwi Salad with Oranges is full of antioxidants! It combines baby spinach, arugula, fruit and berries with a smattering of feta cheese. Tossed with a simple honey-citrus dressing, this salad is as tasty as it is pretty!

    Blackberry Kiwi Salad with Oranges: I know that's a mouthful to say, but what a delicious mouthful it is!

    Have you heard the saying, "blue and green should never be seen without a colour in-between" that some interior decorators and fashion designers recommend? I know it's not a hard and fast rule, but those two colours can be so beautiful together!

    I love the colour contrast in my Blackberry Honeydew Salad with Basil and this Honeydew Blueberry Salad with Blue Cheese. But since I wanted something more seasonal than honeydew melon, I opted for fresh kiwifruit that's readily available in the winter months here.

    Paired with blackberries, it looked striking when I first made it, but I relented and added Cara Cara oranges for my "in-between." They bring beautiful colour and sweet flavour to this healthy spinach salad.

    A dusting of crumbled feta cheese ties all the colours together and gives a salty contrast to the fruit in this kiwi salad with oranges and blackberries.

    • Kiwi salads are both nutritious and delicious! These fuzzy little non-descript-looking balls reveal a beautiful fruit inside when you remove the skin. A bright almost lime-green interior studded with tiny black seeds looks stunning when sliced or formed into kiwi flowers.

    • Blackberries are considered by many to be a superfood. They're full of important vitamins and minerals, fiber, and antioxidants. At the same time, they’re low in calories, carbs, and fat. A handful of blackberries can satisfy a sugar craving in a healthy way!
    • We've all known about the health benefits of oranges since the time we were very small. While you can use any oranges in this salad, I like to use Cara Cara oranges when they're available.

    🛒 Kiwi Salad Ingredients

    You can find the full printable recipe, including ingredient quantities, below. But first, here are a few details about the ingredients and steps to help you make this kiwi recipe perfectly every time.

    greens: you can use your favourite greens or salad mix. I use a mix of baby spinach and arugula leaves.

    fruit: kiwifruit, blackberries, and oranges. I like Cara Cara oranges in salads. Not only are they a pretty colour, but they're also sweet and seedless. But feel free to use any oranges in this salad.

    feta cheese: adds a salty contrast to the sweet fruit and berries. Visually it breaks up the green in this salad. We eat with our eyes first, right?

    dressing: I adapted my Everyday Honey-Citrus Salad Dressing recipe and simply increased the honey a little and eliminated the cilantro and dried peppers. It's an easy homemade vinaigrette, made with orange juice, lemon juice, honey and olive oil.

    🔪 Instructions

    Wash and dry your greens, then arrange in a shallow dish or your favourite salad bowl. Peel and slice the kiwi, cutting one into kiwi roses, if you'd like. Peel the oranges, remove as much pith as possible and divide into segments.

    Sprinkle crumbled feta cheese over the greens, then arrange the kiwi, blackberries and Cara Cara orange segments on top.

    Toss with dressing just before serving.

    👍🏼 Helpful Tips

    How to segment an orange for a salad.

    Oranges are delicious in salads, but even more so if you've removed the pith and membranes.

    To do so, start by cutting a thin slice from both the top and bottom of the orange. Next, remove the peel and as much of the pith (the white part) as you can by slicing from top to bottom all the way around. Then, holding the orange in your hand, carefully slice next to the membrane on either side of each segment, letting the segments fall into a bowl as you cut.

    How to cut kiwi flowers

    If you'd like to add a special to your salad, add a couple of kiwi flowers. These are very easy to make. All you need is a sharp paring knife.

    ❓Questions you might have

    Do I have to peel kiwi?

    Absolutely not! You can certainly eat kiwi with the skin on. It's a good source of fiber. Wash the fruit first, and if it is particularly fuzzy (some are, some aren't) you can give it a little scrub with a vegetable brush.

    🔁 Possible Variations

    If you don't have blackberries, feel free to substitute blueberries. It will still be beautiful, and nutritiously delicious.

    You could also sub goat cheese for the feta cheese if you'd like.

    Storage

    This salad can be made a day ahead of time if stored tightly covered in the fridge. Store leftover salad without dressing for a day or two.

    Ingredients

    • 8 cups baby spinach and arugula leaves or other mixed greens
    • 3 medium kiwifruit
    • 1 cup blackberries
    • 1 large Cara Cara orange or other variety of orange
    • ¼ cup feta cheese, crumbled

    Honey-Citrus Dressing

    • 1 tablespoon white wine vinegar
    • ¼ cup orange juice, freshly squeezed
    • 2 tablespoons lemon juice, freshly squeezed
    • 3 teaspoons honey
    • ¼ cup olive oil, extra virgin
    • 1 pinch each sea salt and black pepper

    Instructions

    • Whisk the honey-citrus dressing ingredients together and let stand at room temperature to allow the flavours to blend.
    • Wash and dry the salad greens.
    • Wash and dry the blackberries.
    • Slice the orange into segments.*
    • Peel and slice the kiwifruit. Make kiwi flowers if desired. **
    • Arrange the salad greens in a bowl, add crumbled feta cheese and top with blackberries, kiwifruit and orange segments.
    • Toss with dressing just before serving.

      As soon as I saw this recipe, I knew I wanted to make it. All I needed was blackberries, so I bought some, came home and made it right away! It has a lovely contrast of sweet and salty flavors! Definitely a keeper recipe!
