    🛒 Ingredients

    Here's your list of easy ingredients for a quick, healthy 30-minute dinner of tender chicken and colourful veggies!

    • chicken breasts: boneless, skinless. You can also use chicken strips or boneless, skinless chicken thighs if you prefer.
    • bell peppers: any colour, but green bell peppers are not as sweet as yellow, orange or red bell peppers. Using a variety of colours makes this chicken fajitas dinner even more appetizing!
    • red onion: adds a sweet yet tangy flavour.
    • homemade fajita seasoning: use homemade fajita/taco seasoning mix or see the list of seasonings in the recipe card below.
    • tortillas: use corn tortillas, white corn tortillas or other gluten-free tortillas to keep this recipe gluten-free.
    • favourite toppings: your choice! Offer avocado or guacamole, salsa or pico de gallo, sour cream, cilantro, and lime wedges for squeezing.

    🔪 Step-by-Step Instructions

    1. Start by slicing the peppers and chicken into strips no more than ½ inch wide. You want them to cook at the same rate, so try to keep them roughly the same size. Slice the onion.
    2. In a large bowl, toss the chicken, peppers and onions with a small amount of oil, then sprinkle with fajita seasoning and toss until well coated.
    3. Brush or use an oil mister to coat the basket of your air fryer with a thin layer of oil. It's best to use an oil with a high smoke point, like avocado oil or grapeseed oil.
    4. Preheat your air fryer to 380°F. for 3 minutes.
    5. Add the mixture (chicken, peppers and onions) to the air fryer basket, shaking to distribute evenly. Depending on the size of your air fryer, you may have to cook these in two batches. Avoid overcrowding the basket.
    6. Air fry at 380°F. for 10 - 15 minutes, pausing, then removing the basket and shaking it to redistribute the fajita mixture every 4 minutes or so. Check the internal temperature of the thickest part of the chicken with an instant-read meat thermometer. It should register 165°F. to be safe.

    👍🏼 A note about air fryer cooking times

    All air fryers cook differently. This recipe was made in a Ninja air fryer. Use the recommended time in a recipe as a guide, adding or subtracting a few minutes.

    The beauty of an air fryer is that you can easily pause it, remove the basket, give it a shake and check to see if your food is cooked. As I mentioned above, an instant-read meat thermometer is a useful tool to make sure your meat is cooked to a safe temperature.

    👍🏼 Helpful Tips

    Don't overcrowd your air fryer basket. If it's too full, the air won't have a chance to circulate properly, and your food will cook by steaming rather than frying.

    Add lime juice after, not before. Lime juice adds a bright flavour to fajitas, but it's best to add a squeeze or two after they're cooked instead of before. Squeeze a little over the fajitas before serving or offer lime wedges on each plate.

    🔁 Possible Variations

    • Keep it colourful! I recommend using red, orange and yellow bell peppers as they have a naturally sweet flavour. However, green peppers add colour and flavour and you might like to add one of those, too.
    • Substitute milder onions. If you don't care for red onions, substitute milder white onions. You can take the bite out of red onions by soaking them in ice water for 10 minutes. Pat dry before tossing them with oil and seasonings and adding to your air fryer.
    • Customize your seasoning mix. You can customize the fajita seasoning to your preference by adjusting the amount of spices such as chili powder, cumin, paprika, and garlic powder.
    • Offer lime slices. You can also add a squeeze of lime juice for an extra tangy kick.

    🥶Storage and Reheating Instructions

    Refrigerate leftovers promptly in an airtight container. Fajitas reheat beautifully, making them a good choice for meal prep. This recipe makes enough for four. If you're cooking for two, you'll have enough to either save half of it uncooked or cook and reheat for a second dinner.

    To reheat, add leftovers to the lightly oiled basket of your air fryer. Heat at 350°F. for a few minutes until heated through, shaking the basket from time to time. Air frying time will vary depending on how much fajita mixture you're reheating.

    🍽 What to serve with air fryer chicken fajitas

    Here are some suggestions for what to serve with chicken fajitas:

    1. Warm Tortillas: Serve your fajitas with a stack of warm tortillas. You can warm them up in a pan, on a griddle, or in the oven for a few seconds.
    2. Rice: White or brown rice makes a great side dish to accompany them. You can prepare it with a little lime juice and cilantro for a zesty and aromatic twist.
    3. Beans: Refried beans or black beans, seasoned with spices like cumin and paprika, can add a protein-packed and flavorful element to your fajita meal.
    4. Guacamole: Fresh, homemade guacamole adds a creamy and tangy contrast to the smoky flavors of fajitas or top them with avocado crema.
    5. Salsa: Fresh or store-bought salsa or pico de gallo, whether it's mild or spicy, can complement fajitas with its zesty flavors.
    6. Sour Cream or Greek Yogurt: Creamy, tangy sour cream or Greek yogurt can cool down the heat of the fajitas and add a delicious contrast in taste and texture.
    7. Cheese: Sprinkle shredded cheese, such as cheddar, Monterey Jack, or queso fresco, on top of the fajitas for an extra layer of cheesy deliciousness.
    8. Fresh Vegetables: Serve a side of fresh vegetables, such as sliced avocado, sliced jalapeños, shredded lettuce, or diced tomatoes, to add crunch and freshness to your meal.

    Ingredients

    • 2 large chicken breasts, boneless, skinless (or 4 - 6 thighs)
    • 1 tablespoon olive oil, extra virgin
    • 3 large bell peppers, one red, one yellow, one orange
    • 1 medium red onion, thinly sliced
    • 3 tablespoon fajita or taco seasoning mix, see ingredients in Notes below

    Possible Toppings

    • guacamole, or cubed or sliced avocado
    • pico de gallo, or salsa
    • lime quarters
    • cilantro leaves, chopped
    • sour cream
    • shredded cheese
    • tortillas corn tortilla, white corn tortillas or other gluten-free tortillas or flour tortillas if you don't need this recipe to be gluten-free.

    Instructions

    Notes

    To make your own taco or fajita seasoning mix (the two are very similar) combine in a small bowl: 
    • 6 tablespoon chili powder
    • 2 tablespoon cumin
    • 2 tablespoon garlic powder
    • 2 tablespoon paprika
    • 1 tablespoon dried oregano
    • 1 tablespoon onion powder
    • 2 teaspoon salt
    • 2 teaspoon pepper
    • 2 teaspoon crushed red pepper flakes
    Store in a small jar and use in any Tex-Mex recipes. You will need 3 tablespoons of this mix for this recipe.

      I've made these in the oven before, but using my air fryer to cook them was so much faster--and the chicken didn't get dried out! I'm a convert now.

      OMG these were so easy and so fast! I heated tortillas in a towel in the microwave and we filled them up and had guacamole with them. So good.
