Crispy bites of prosciutto, warm pears, and juicy chicken, all bathed in a white wine sauce make this a meal that's easy enough for quick weeknight cooking, but worthy of sharing at a dinner party, as well.

    All the flavor without the work! You won't need to wrap chicken in prosciutto as you do for Chicken Saltimbocca. Simply make crispy bites of prosciutto to tuck in between juicy chicken, sweet pears, and melted Parmesan cheese!

    🛒 Ingredients

    Labeled ingredients for chicken with prosciutto, pears and parmesan: chicken, prosciutto, Parmesan, pear, lemon zest, flour, honey, thyme, white wine, chicken broth.

    You'll find a complete list of ingredients with quantities in the recipe card below. Here are a few notes about what you'll need to make this easy chicken recipe.

    • prosciutto: You'll cut slices of prosciutto ham into bite-sized pieces
    • boneless chicken breasts or boneless chicken thighs
    • olive oil, extra virgin, divided
    • dried thyme and lemon zest: for seasoning the chicken together with salt and pepper.
    • flour (all-purpose flour, spelt flour, or gluten-free flour): to coat the chicken.
    • white wine: If you don't cook with wine, you can add extra chicken broth.
    • chicken broth: to make a rich flavorful sauce.
    • pear: You can use any variety of pear for this recipe, but a firm pear, like Anjou or Bosc, will hold up nicely once baked in this recipe.
    • honey: for a sweet and salty contrast in flavors.
    • Parmigiano Reggiano or Asiago cheese: to melt on top of the finished dish.

    🔪 Instructions

    Complete step-by-step instructions to make this one-pan chicken with prosciutto dish are in the recipe card below. Here's a quick overview.

    1. In a large oven-proof skillet, fry the prosciutto until crisp. Remove it from the pan and set it aside.
    2. Rub the chicken pieces with olive oil and season with thyme, lemon zest, sea salt or Kosher salt, and pepper. Toss with flour until they're well coated.
    3. Add a little oil to the skillet. When hot, add the seasoned, coated chicken pieces and sear on each side until nicely browned, about 3 - 4 minutes per side.
    4. Remove to a plate and cover to keep warm. Reduce the heat, scrape up the browned bits from the pan, and then add the wine and chicken stock.
    5. Add the chicken back into the pan and simmer until the chicken pieces are cooked through. Check the temperature with an instant-read meat thermometer. It should register 165°F. to be safe.
    6. Tuck the sliced pears around the chicken pieces and drizzle with honey. Add the crisp prosciutto to the skillet, as well.
    7. Sprinkle with cheese and transfer the skillet to the oven. Roast for 5 minutes or until the pears have softened slightly and the cheese has melted.
    8. Serve hot and enjoy!

    5. Add the chicken back to the pan and simmer until it reaches 165°F.
    6. Tuck in sliced pears, and crisp prosciutto and top with grated Parmesan cheese. Return to the oven until the cheese has melted and the pears have softened.

    🔁 Possible Variations or Substitutions

    • While most of my recipes are gluten-free, you'll notice that I've provided options for coating the chicken. All-purpose flour is the traditional choice, but I have tested it with both spelt flour and gluten-free flour and both types work beautifully.
    • I used Parmigiano-Reggiano and Asiago cheese for this chicken with prosciutto recipe because I like their rich, sharp flavors, but you could use your favorite cheese, or whatever you have on hand.
    • Blue cheese or Gorgonzola cheese pairs well with pears. Your family may prefer something simple like aged cheddar, mozzarella, or even goat cheese.
    • If you don't have pears, you can substitute apples. There is no need to peel them. In fact, they will hold their shape better if you leave the peel on.

    🍳 Equipment

    You'll need a large oven-proof skillet to make this recipe. If you don't have one, that's not a problem. You'll simply transfer the cooked chicken mixture to a baking dish, then proceed with steps 4 through 6, above.

    🕑 Make ahead of time

    Short on time? Do you like to have most of your meals prepared ahead of time? So do I!

    You can prepare most of this recipe for chicken with prosciutto and pears ahead of time!

    1. Fry the prosciutto and set it aside.
    2. Sear the chicken parts.
    3. Add the sauce ingredients to the pan.
    4. Simmer until the chicken is cooked.
    5. Transfer the chicken and sauce to an airtight container, and refrigerate (or freeze it.)
    6. When you're ready to serve, reheat the chicken in a skillet or baking dish and add the prosciutto, pears, honey, and parmesan. Heat until the pears are slightly tender and the cheese has melted.

    🍽 What to serve with baked chicken and pears

    Here are a few side dishes that would pair wonderfully with baked chicken with prosciutto, pears, and Parmesan cheese:

    1. Apple Cider Roasted Root Vegetables: Roasted vegetables like carrots, beets, and sweet potatoes complement this dish beautifully. The caramelized flavors of roasted veggies balance the richness of the chicken.

    Storage Instructions

    To store: Store leftover cooked chicken promptly in an airtight container in the fridge for up to 4 days.

    To reheat: Gently reheat in the microwave or in a baking dish in a 350°F. oven for 10-20 minutes or until heated through.

    Freeze it: Freeze the cooked chicken and sauce without the pears or Parmesan cheese. Thaw overnight in the fridge, then reheat in a skillet and add the pears and Parmesan as directed in the recipe card below.

    Equipment

    1 12-inch ovenproof cast iron skillet
    1 box grater

    Ingredients

    • 4-6 slices prosciutto cut into bite sized pieces
    • 1 ½ lbs boneless chicken, thighs or breasts
    • 2 tablespoon olive oil, extra virgin, divided
    • 1 teaspoon dried thyme
    • 1 medium lemon, zest of
    • sea salt or Kosher salt and black pepper to taste
    • 6 tablespoons flour(divided) (all-purpose, spelt or gluten-free)
    • ¾ cup white wine
    • 1 cup chicken broth, low sodium
    • 1 large pear cored and cut into ⅛ths, no need to peel
    • 1 tablespoon honey
    • ¼ cup Parmigiano Reggiano, or Asiago cheese, coarsely grated

    Instructions

    • Heat oven to 400°F.  Fry prosciutto in a large oven-proof skillet on the stovetop until crisp. Remove, drain on paper towel, and set aside.
    • If chicken breasts are large, cut them in half. Rub the chicken with a few teaspoons of olive oil and season with dried thyme, lemon zest, salt, and pepper. Toss with 4 tablespoons of the flour until they're well coated.
    • Heat the oil over medium heat in the same skillet. Add the chicken pieces and sear for 3 - 5 minutes on each side until nicely browned. Remove to a plate.
    • Reduce the heat to medium-low and scrape up the browned bits from the pan. Add the chicken broth and wine. Whisk the remaining 2 tablespoons flour with ¼ cup of the broth mixture, then whisk it back into the skillet to slightly thicken the sauce. Add the chicken pieces back into the pan. Simmer for 10 - 15 minutes or until cooked through and no longer pink. Chicken should register 165°F. on an instant-read meat thermometer.
    • Add the chicken pieces back into the pan. Simmer for 10 - 15 minutes or until cooked through and no longer pink. Chicken should register 165°F. on an instant-read meat thermometer.
    • If not serving this dish right away, you can prepare the dish to this point, then refrigerate (or freeze) and reheat just before serving.
    • Tuck sliced pears in around the chicken pieces and drizzle with honey. Add the crisp prosciutto into the skillet as well. Sprinkle with cheese and transfer skillet to oven. Roast for 5 minutes or until pears have softened slightly and cheese has melted. Serve.
