❤️ Why you'll love this recipe

    • So refreshing! Is there anything more refreshing than watermelon on a hot summer day? This watermelon lemonade is the best thirst-quencher!
    • It's sugar-free! Most lemonade recipes need at least half a cup of granulated sugar to counteract the tart lemons. This recipe is made with 0-calorie Monkfruit sweetener so all you're drinking is pure watermelon and organic lemon juice!
    • Healthier! While it's tempting to quench your thirst with canned or bottled drinks, many of these are high in sugar. Homemade watermelon lemonade with Monkfruit sweetener is a healthier alternative!
    • Quick and easy! No need to squeeze the lemons. Simply peel then add the fruit to the blender.
    • If you've poked around other recipes on this site, you'll know that I love creating mocktails and sangria cocktails like this Sparkling Strawberry Limeade, Honeydew Lime Mocktail with Mint, Strawberry Watermelon Sangria Slushie, Peach Sangria with Prosecco and so many more!

You'll find a complete list of ingredients with amounts in the recipe card below. But before we get to the full recipe, here are notes about the ingredients.

    • watermelon: you'll need half a large watermelon to make enough drinks for four people. Look for one that is heavy for its size, as it will probably have high water content and be sweeter.
    • lemons: you'll need 4 or 5 medium to large lemons.
    • Monkfruit sweetener with erythritol: for natural sweetness without sugar.
    • mint: optional

Haven't tried it yet as I am pondering what I might do with the pulp that I am straining out. Can't quite see myself just composting it all. Any thoughts about what I might do with the pulp?

Great question, Patricia. You could freeze it in ice cube trays to add a flavour boost to a glass of water, add it to a smoothie, stir it into oatmeal or yogurt, or top a bowl of granola. If you have more ideas, share them here! Thanks for asking.
