- Gorgonzola cheese: a pungent, soft blue cheese from Italy. Lots of flavour!
- Greek yogurt: I like to choose a full-fat variety for the creamiest dressing and dip.
- olive oil: extra virgin
- apple cider vinegar: you can substitute white wine vinegar.
- buttermilk or whole milk: add a tablespoon or two of milk helps to thin the dressing to make it pourable.
- salt and pepper to taste

You'll start by combining the olive oil and vinegar in a small bowl, then whisk in the yogurt. Once it's smooth, add Gorgonzola cheese crumbles and season with salt and pepper to taste.
You can choose to leave it slightly chunky (best for a dip) or use a food processor or a standard blender to make a smooth and creamy dressing. Add a tablespoon or two of milk to thin it to make a pourable dressing if you'd like.

You can add a ¼ to ½ teaspoon of Worcestershire sauce for a little umami flavouring, if you'd like.
You can also substitute sour cream for Greek yogurt (or use half sour cream and half Greek yogurt.
Love a sprinkle of herbs on top? Add a teaspoon or two of finely chopped parsley.

If your Gorgonzola cheese is at room temperature, it will combine more easily with the other ingredients. If it's cold, it's much harder to achieve a creamy dressing.
For a thinnerdressing or to make it pourable, add milk or buttermilk, a tablespoon at a time until you've achieved the desired consistency.
A thinner consistency is best for a Gorgonzola salad dressing, while a dip for Buffalo wings is best when it's thick and chunky.
Gorgonzola is an Italian blue cheese, made in the Northern Italian regions of Piedmont and Lombardy.
It is generally softer and milder than blue cheese, although it is still a strong-flavoured pungent cheese. It's made from cow's milk, while blue cheese can be made with milk from sheep, goats, or cows.
It has a "bite" from the blue-green veins running through it that result when it is inoculated with Penicillium glaucum while it is ripening.
Blue cheese is produced in several countries and there are several varieties. Some other common types of blue cheese are Blue Stilton, Roquefort and Cambozola.

Once you make this dressing and dip recipe, you'll want to have it on everything. Here are a few ways I like to use it.
Salads: While it's traditional to serve blue cheese on a wedge salad, you can raise any simple green salad to new heights with this blue cheese dressing! It's perfect on this Tuscan Kale Salad or this Lemon Garlic Shrimp Cobb Salad. Gorgonzola and pears are a match made in heaven! This dressing tastes amazing on this Arugula Pear and Parmesan Salad when you replace the Parmesan with Gorgonzola dressing.
Veggies: Serve it as a dip with fresh-cut veggies. I love it with Crisp Raw Kohlrabi Sticks. Kohlrabi has a mild flavour, ideal for dipping in a zippy dip!
⏰ Storage Instructions
To store: Store this gorgonzola dressing in a jar or covered container in the fridge. It will last for up to a week.

Greek Yogurt Gorgonzola Dressing and Dip
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons apple cider vinegar, or white wine vinegar
- ¼ cup plain Greek yogurt
- ½ cup Gorgonzola cheese crumbles, at room temperature
- ¼ teaspoon sea salt or Kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons milk, or buttermilk (optional)
- In a small bowl or jar, whisk the olive oil and vinegar together.
- Whisk in the Greek yogurt until smooth.
- Stir in Gorgonzola cheese crumbles.
- Leave the mixture a little chunky for a dip, if you like. For a pourable dressing add 2 - 3 tablespoons of milk or buttermilk, one tablespoon at a time until you've reached your desired consistency. A mini food processor will produce a smooth dressing.
